At Itosugi, we offer Sushi and Kappo style cuisine. A multi-course menu with each dish showcasing a specific technique, prepared at the counter in front of the customer.
Our aim is to make sushi and kappo style dishes using the best seasonal ingredients which North America has to offer, with a focus on the ingredients of the Pacific Northwest.
